ABOUT US
White Salmon Baking Company is located just off the main street in White Salmon, WA right across the Columbia from Hood River. The bakery is owned and operated by Jure Poberaj and Nina Jimenez. Offered are a variety of breakfast and mid-day pastries, artisanal bread, and celebration cakes using the highest quality ingredients. We are lucky to be neighbors with small farms and orchards and take full advantage of farm fresh produce and rare heirloom varietals not commonly found elsewhere.
BREADS & OVEN
The bread baking process starts with minimal ingredients including flour sourced from small-scale Pacific Northwest mills. Loaves are naturally leavened aided by wild yeast unique to the gorge region. A long slow fermentation adds to the bread’s complexity and character. And finally the bake in a custom hand-build wood-fired oven imparts a culmination of texture and flavor. All of our breads use a sourdough starter and a overnight fermentation to help with gluten digestion.
The oven was designed by Alex Chernov from StoveMasters and built by Jure and his father. The baking chamber measures 4’x6’ and is surrounded by 10 inches of insulation. The generous insulating allows us to fire up the oven in the evening; when the bakers arrive in the morning, it has slowly cooled to 500*F (the ideal temperature.)
THE CAFE
The café is a delightful spot any time of year. Get cozy with a book, coffee, and pastry on a rainy day. Or bathe in the sun on our south-facing patio during the warmer months.
Consider this special setting for your next celebration. We offer in-house catering serving rustic fare, Mediterranean influenced, or wood-fired pizza using uniquely pacific-northwest ingredients. Enjoy the view of Mt. Hood as you dine at on our patio.
