EVERYDAY BREADS:
RUSTIC WHITE
1 kg loaf made with levain (native sourdough starter), wheat flour, and whole wheat flour. Thin, chewy crust, and soft open crumb.
SESAME SEMOLINA
Semolina flour and whole wheat flour. Slightly sweet, buttery flavor, and denser crumb.
BAGUETTE
French style baguettes using equal amount of polish and levain. Crisp crust and light, airy crumb.
English Muffins
Rustic white dough, shaped and baked in traditional oven. *Butter on top.
SUNDAY:
MAMA LIL’S & CHEDDAR
Mama Lil’s spicy pickled peppers (local from Portland) added to rustic white dough.
SEEDED WHOLE WHEAT
Hard red wheat flour, oats, poppy, sesame, and sunflower seeds.
MONDAY:
GARLIC & ROSEMARY
Roasted garlic and fresh rosemary folded into rustic white dough.
RED FIFE
Red fife flour (an ancient/heritage whole wheat grain) and hard red wheat flour. Herbaceous, toasty flavor.
WEDNESDAY:
APRICOT & WALNUT
Dried apricots and toasted walnuts added to rustic white dough.
SUNFLOWER, FLAX, & RYE
Dark rye and hard red wheat flour. Flax and sunflower seeds. Medium crumb, hardy bread with a nutty flavor.
DANISH RYE
Rye flour and spelt flour, oats, sunflowers, flax, sesame seeds, buttermilk, molasses, stout, Kamut, and levain. Our most dense and powerful tasting loaf.
THURSDAY:
ROASTED GARLIC & HERB
Herbs de Provence and roasted garlic added to rustic white dough.
FRIDAY:
OAT PORRIDGE & ALMOND
Oats, purple barley flakes, polenta, sprouted quinoa, and toasted almonds added to rustic white dough. Hearty, but not heavy, high in protein.
COUNTY RYE
Hard red wheat and dark rye flour.
BREADS
SATURDAY:
OLIVE ROSEMARY
Pitted kalamata olives added to rustic white dough.
POPPY SPELT
Spelt flour, hard red wheat flour, wheat bran, and poppy seeds. Spelt is a mild, nutty tasting grain, and low in gluten.
